FR - Here we share the delicious and refreshing recipe for melon gazpacho created by Ornella Coffinier (read our article). It’s the perfect way to showcase the benefits of this essential summer fruit!

The melon? Likely native to Africa, this close relative of the cucumber was already being cultivated by the Egyptians in 500 BCE as… vegetable, before making its way to Greece, then Italy and France.

Packed with water, rich in vitamin B9 and beta-carotene (provitamin A), and containing 62 kcal per 100g, melon is a wonderful staple of summer cooking – as good for your health as it is for your taste buds, whether served sweet or savoury.

Ingredients (serving 4)

1 ripe melon, 1 cucumber, ½ sweet onion, 1 tablespoon of lime, 2 tablespoons of olive oil, salt, pepper, some mint leeves or some slices of cured ham.

Recipe

Slice the melon in dice, peel cucumber and onion, cut them roughly.

Place all the ingredients in a blender with the lime juice, the olive oil & salt/pepper.

Mix till obtaining a smooth & homogenus texture.

Place in the fridge for at least 1h.

Serve chill, garnished with mint leaves and, if you wish, some shavings of cured ham.
