Ode des sens, an inspired restaurant in Saint-Siffret

(FR) - A newcomer on the Gard gastronomic scene, Ode des sens is promising you a succulent experience "where tradition and innovation meet".

Head of the restaurant, French chef Enzo Savournin, a former student of the Cooking High School of Saint-Chély-d'Apcher, was trained with some of the great Michelin-starred cuisine names.

His references include Le Belvédère (* Michelin star) and its chef Guillaume Viala, and Les Maisons Marcon (3*) and chefs Jacques and Régis Marcon.

The historic setting of the village of Saint-Siffret is the perfect backdrop for the restaurant, which perfectly complements the authentic flavours of the chef's cuisine: "Each dish tells a story, inviting guests to immerse in my philosophy, where relaxation and tasting come together for an unforgettable moment," says Enzo.

 

 

 

 

Ode des sens

 

As far as the menu is concerned, it is influenced by the seasons. Highlighting the vegetables, the chef combines them with the wild herbs he likes to gather during welcome picking breaks. The result is a cuisine that is colourful, tasty and sometimes surprising, but so delicious.

One dish in particular sums up this plant(vegetable-based alliance, a skilful blend of market seasonal vegetables and aromatic herbs. There are between 30 to 40 varieties, cooked separately so that each retains its own flavour and is cooked just right... In spring come asparagus, among other delights, in summer the plate promises to be even more colourful with peppers, zucchini... In autumn, the cuisine will be filled with the accents of pumpkins and other squashes, leeks and beetroot, while in winter we'll find truffles and, who knows, sweet onions from the Cévennes or chestnuts, all finding their way onto the menu, of course.

Want to discover the world of Enzo Savournin? No need to wait for the Festival d'Art Contemporain Art & Patrimoine in July at Saint-Siffret. The restaurant opens its doors at the end of March in the old village school. The classrooms, renovated and decorated, will add to your gastronomic experience a slightly historic, even rural setting. On the slate, instead of homework, you can choose between 3 menus: Ode, in 8 courses, Odelette, in 5 courses and, finally, a lunch menu, in 3 courses, on Wednesday, Thursday and Friday lunchtimes only.
