Delight of butternut with spices, from the Magnanerie de Dions

Original and gently spiced, this recipe will surprise your taste buds and your Xmas guests.

600 g cooked butternut, 1/2 orange juice, 1/2 lime juice, 300 g white sugar, 1 bag of vanilla sugar, 1 cinnamon stick, 1 star anise, some ginger.
Peel and cut the butternut into small pieces. Cover and cook in a saucepan with some water.
Drain and put in a bowl.
Add the other ingredients and leave to infuse overnight.
Return to the pan, bring to the boil and leave to simmer for 10 to 15 minutes.
Remove the spices and blend with a plunger.
Bring back to the boil and put in marmelade jars.
Close and turn the jars upside down for sterilisation.
