Allergen-free vegan gingerbread by Maud Simonelli

The gingerbread (or pain d'épices in French) is a cake traditionally sweetened with honey, spices

(such as cinnamon, coriander, ginger or star anise).

According to Alain Rey in his Dictionnaire historique de la langue française (2010),

the "pain d'espessez" was first named in 1372 and the  "pain d'épices" in 1530...

 

 

INGREDIENTS 

65 ml vegetable oil, 2 tablespoons lin seed, 170 ml water, 30 g acacia honeydew or wildflower honey, 1/2 teaspoon vanilla flavouring, 240 g brown rice flour, 1/4 teaspoon salt, 1 teaspoon bicarbonate of soda, 1 teaspoon cream of tartar, 1/2 tablespoon arrowroot, 2 teaspoons ginger powder, 1/2 tablespoon cinnamon powder, 1 pinch grated nutmeg, 1/2 teaspoon ground allspice, 250 ml unsweetened apple purée.

PREPARATION

Pain d'épices®maudsimonelliPreheat the oven to 175°C. Lightly oil a 23 cm square baking tin.

Grind the flax seeds and place in a bowl. Add the water, stir and leave to set for 5 minutes. Set aside.

In a large bowl, using a mixer, beat the oil and honey for about 2 mins. Add the flaxseed and water mixture a few spoonfuls at a time, beating after each addition.

In another bowl, sift all the dry ingredients together then add to the first bowl, a little at a time to incorporate well. Alternate with a ladleful at a time of apple sauce.

Mix well after each addition.


Pour the mixture into the tin and bake in the middle of the oven for around 35 mins, or until a knife inserted in the centre comes out clean.

Remove the tin from the oven and leave to cool for at least 15 minutes. Turn out of the tin and leave to cool on a wire rack for at least another 30 minutes before serving.
