Tarte fine pommes oc nutritionThe puff pastry apple tartlets

Ingredients for 4: 1 butter puff pastry, 3 apples (Gala, Golden, Pink Lady), 2 tablespoons of apple or abricot jelly (for the gloss), 2 tablespoons of water, 4 little branches of fresh rosemary, some icing sugar for the finish.

Preparation:

For the pie shell

Cut 4 pastry circle (8-10 cm). Put them in the mold. Pierce the base with a fork. Precook for about 10 mn at 180°C to avoid the base to become soggy.

Prepare the apples

Peel the fruit. Slice them thinly, but always with the same thickness to assemble the tree regularly.

Prepare the Xmas tree

Put the slice on above the others, from the bigger to the smaller to create your Xmas tree (see photo). Pick a tooth pick in the middle to keep it from moving.

Baking

Bake in the oven for about 20 to 25 mn at 180°C, till the apples look tender and the pastry golden.

For the gloss

For the beauty touch...

Heat the jelly with 2 tablespoons of water. Coat the warm apples with it to obtain a golden look.

Dressing

Stick a little branch of rosemary on top of the Xmas tree. Sprinke some icing sugar to obtain a snow effect.

 

Verrine framboise oc nutritionThe Snow Rasperries verrines

Ingredients for 4 verrines: 250 g fresh or frozen raspberries, 200 g cottage cheese or 0 à 5% greek yogurt, 150 g mascarpone, 2 tablespoon of sugar of agave syrup, 1 teaspoon of vanilla extract, 8 sponge cake biscuits or biscuit spoons, 4 round tea biscuit, icing sugar.

Preparation :

Prepare the light cream

Whip mascarpone + cottage cheese  + vanilla extract + sugar to obtain a firm cream.

Prepare the raspberries

Don't cut the raspberries. If they are frozen, defrost them and wait for them to drain a bit.

Assemble

Dress as can be seen on the photo.

On the bottom, place a piece of sponge cake or crumbled biscuit spoon. Add a layer of raspberries, cover with some cream. Smoothen the top.

Decoration

Use a piping bag to decorate with the cream left. Add the rest of the raspberries.

Put a tea biscuit on top of it and sprinkle with icing sugar.
