Airy muffins with artichoke and salmon

Here is a nice recipe to enjoy artichokes. Those muffins are deliciousy spongy and perfect to have on a picnic day !

Ingredients: 50 g of soft cheese (or ricotta, white cheese), 140 g of complete German wheat flour, 1 egg, 4 artichoke hearts, 1 slice of smoked salmon, 1/2 of baking powder package, 50 g of melted salted butter, a bit of olive oil and celery salt, oignon or shallot semolina.

Preparation: Mix flour, egg and baking powder with the soft cheese and the melted butter. Mixed the artichoke hearts with a bit of olive oil, some oignon/shallot semolina, then cut the salmon into small pieces. Add to the first preparation.

Lay the dough in some muffins molds and bake for about 20 mn at 200º. I'ts ready... Enjoy!

The extra touch? Cover the muffins or half of each of them with ricotta/olive oil/shallot mix. Just... Excellent!

Another version of the recipe: use green asparagus instead of artichokes. Sure success! Don't forget to add shallots or oignons and the salmon to give the extra flavour needed !
